I'll be up-front in saying that I wrote a few reviews for the book, though none of us contributors got paid. I just got my free copy in the mail today and I must say that the book turned out even better than I expected. Being a food-fan and lived in San Francisco for almost 2 years, I still found oodles of places to try and honest info about eateries I would have usually avoided, but am now quite curious about. Every local resident and area traveler should have this book - a truly indispensable guide for affordable and uber-tasty goodies.

Is there an audience for Todd Wilbur's Low-Fat Top Secret Recipes, a collection of fat-reduced and make-it-yourself formulas for the likes of Screaming Yellow Zonkers? Judging from the success of Wilbur's previous cookbooks, which also provide favorite food-product recipes, the answer is you bet. This book is for those times when a chocolatey Oreo or gooey Entenmann's cinnamon roll--made at home--is just what the doctor ordered. The 75 or so recipes are divided into two sections: Low-Fat Top Secret Recipe Clones, which provides formulas for duplicating already low-fat foods such as Nabisco Honey Maid Grahams and Gardenburgers, and Low-Fat Top Secret Recipes Conversions, recipes for reduced-fat renderings of normally fatty foods like Wendy's Spicy Chicken Sandwich and McDonald's Egg McMuffin. These recipes reduce fat calories by half or more. The formulas produce food that is at least as credible as its ancestors and sometimes better. Readers should know, however, that many of the recipes require low-fat or ersatz food items, such as egg substitute, and that food coloring is sometimes called for. the top secret recipe concept is great. I like that I can *clone* my favorite recipes at home...for much less cost. The traditional top secret recipes are not usually low fat. The prime consideration is taste. While this is a good thing, it makes it hard to incorporate them into a diet program.

With this version it is possible. In general I find the top secret recipes a bit heavy on ingredients... which can be a bit of a pain during prep and also the cost of expanding your panty. But to be able to make some favorites at home, at a fraction of the cost and now...low fat. Its a great alternative!

I sort of wished that I had discovered this book a few years ago.

Being a meat lover, I have explored various bottled BBQ sauces for quite a while. You can get a bewildering array of them from supermarkets, summer fesivals, webtailers, etc. I found only a couple of them that passed muster (Chris & Pitts; Everett & Jones). I also neglected to keep a diary of what I sampled, and what I thought of them.

This book has already done most of the groundwork for you. It is sort of like a field guide that you take with you to the store or web site when you want to buy some BBQ sauce. It has reviews, descriptions, and pictures of at least 200 different ones. Although I have violent disagreements about some of the opinions, for the most part the book is an extremely valuable and useful resource.

It categorizes sauces into 3 types: sweet, tangy, and fiery. There are some recipes at the end, but I would not take these very seriously. It serves as a good starting point for those who would like to explore the wonderful world of bottled BBQ sauces. For example, I discoverd Gates from this book, and it explains why I hate KC Masterpiece and Bull's Eye, but like Kraft. It is also a good resource to help you avoid those BBQ sauces that taste like pancake syrup with a little ketchup and tabasco sauce.

Also note that there a many boutique brands in this industry. Many in this book are no longer available, and many have sprung to life since this book was published in 1999.



Tasty - Douglas R. Worgul -
This book, written by one of the most beloved and trusted personalities in barbecue, is a rare treat. It is fun to read, delightful to look at, and exceptionally useful. Since it is unlikely that anyone other than Ardie (Remus) will ever have the opportunity or time to taste and evaluate all these wonderful sauces, consuming this book is the next best thing. I return to it often, whether to guide me in choosing the right sauce or to provide me with reading pleasure.

Our entire family is crazy about this product. My children age
5 and 10 love the mild sauce. They put it on everything from hotdogs to vegetables. My husband and I use the hot and spicy sauce about 4 times a week. It is fantastic on all meat and poultry. We have stocked our shelves full of this wonderful barbeque sauce. We like it so much we even used it for my husband's 40th birthday party favors. Our theme was wild and crazy and we thought this hot barbeque sauce would be a hit with all of our friends.

I am so happy Amazon now sells this sauce. If you try it, you will never go back. There is such a complex, rich chipotle-infused flavor! We love it on ribs, hamburgers, and french fries. We have many open bottles of other rejected BBQ sauces but keep buying more Big Acres Hot and Spicy.
